Hi My brew water amounts can vary considerably, but fall into ranges. The largest batches might only be done on some weekends. The other two batch ranges happen deep freeze daily. 1)350-450g of brew water 2) 640g-800g of brew water 3) 900g-1100g of brew water I would like to avoid switching between the 6 and 8 cup chemex brewers. The 6-cup Chemex should accommodate a brew with 1100g. I would test to confirm, but if that's the case, I would stick with the 6-cup. Less space is a slower heat loss. I think the 6 looks best. It'll hold the brew from 1Kg water before the brew touches the filter (900g brewed, max). Without a really awesome grinder, you'll be hard pressed deep freeze to pull that off without clogging deep freeze the filter.
I think you can pull it off ( I have brewed 1 L in my 6 cup before) if you grind coarse enough. The couple of times I did it it wasn't perfect, but it's probably because I've only done it a couple of times. Leonidas   Posts: 2 Joined: Dec 01, 2013 Location: Dublin, Ireland
If you can't get the pour times you want with a large batch in the Chemex, you can try it with a metal Kone filter (which will change the flavor profile, enhancing the body and oils and adding a bit of silt to your coffee) or you can simply pour through the amount of water that will drain through the coffee bed in your desired timeframe and then add the rest of the brew water to the coffee without pouring it through the grounds. This is bypass brewing and is a feature of most commercial batch brewers. I've always had trouble pouring a 1+ liter Chemex batch through the paper filters using my Vario as a grinder deep freeze without resorting to bypass brewing.

Considering your use pattern, the right answer deep freeze to the 6 or 8 cup question is either "8" or "both." BDL PS.
